Very Veggie Soup

Trying to stay warm in this bitter cold weather? 
This low calorie vegetable soup is a classic.
Serves 6 to 8                                                                                  0 Weight Watchers Points
Shopping List
3 cups nonfat beef broth
2 garlic cloves, minced
1 tablespoon tomato paste
2 cups chopped cabbage (I even added extra because I love cabbage!)
1/2 yellow onion
1/2 cup chopped carrot
1 cup okra
1 cup chopped yellow pepper
1/2 cup green beans
1/2 cup chopped zucchini
1/2 teaspoon basil
1 tablespoon ginger powder (optional)
1/2 teaspoon oregano
Salt & Pepper
Directions
1) Rinse and chop garlic, cabbage, onion, carrots, okra, yellow pepper, green beans and zucchini.
2) Spray a pan with nonstick cooking spray and saute chopped onions, carrots, and garlic until soft.
3) Add broth, Tomato paste, cabbage, green beans, okra, yellow pepper, basil, oregano, ginger powder and Salt & Pepper to taste.
4) Simmer for 5-10 minutes or until all vegetables are tender then add the zuccini and simmer for another 5 or so minutes.

  2. What a wonderful recipe! My daughter has problems eating meat so this would be a great recipe for me to make for her!
