Fabulously Fall Pumpkin Cookies


Looking for a fun and quick Fall treat?  Check out these delicious Pumpkin Chocolate Chip Cookies.  The recipe makes about 24 cookies and the dark chocolate chips really make it yummy!

Ingredients:

2 c. all-purpose flour (I used 1/2 c. whole wheat flour and 1 1/2 c. unbleached white flour, but use whatever floats your boat)
 1 c. pumpkin puree (fresh or canned)
 1/2 c. white sugar
 1/2 c. brown sugar
 1/2 c. melted butter
 2 eggs
 1 tsp. vanilla extract
 1 tsp. cinnamon
 1/2 tsp. ground clove
 1/2 tsp. ground nutmeg
 1/4 tsp. ginger powder
 1/2 tsp. salt
 1 tsp. baking soda
 2 tsp. baking powder
 2 c. chocolate chips
 1/2 c. chopped walnuts (optional)

 

Directions:
Pre-heat oven to 350 F (175 C).
 In a large bowl, combine pumpkin, sugar, butter, vanilla, and eggs.
 In a separate bowl, stir together flour, baking powder, baking soda, spices, and salt.
 Gradually mix flour mixture into pumpkin mixture.
 Add chocolate chips and nuts (if using).
 Drop by large spoonfuls onto a greased or lined cookie sheet, and bake for about 10 – 15 minutes, or until golden brown and firm.
