What's for Dinner?


I get so many requests for this delicious recipe, I thought I would share it again.

Unstuffed Pepper Bake
 
 

Looking for a quick & yummy dinner?  Check out this recipe from Kroger.  I have made a few adjustments to make it even quicker.   I serve it with Tortilla Chips and Sour Cream.  Enjoy.


Prep time: Less than 15 minutes
Total time: 35 minutes
Serves: 4-6

Shopping List... 
•1 lb Ground Beef or Turkey

•1/3 c  Diced Onion
•1/2 c Chopped Green Peppers (You can also add Red Peppers!)

•½ tsp Garlic Powder

•14.5 oz can of Petite Diced Tomatoes, drained

•1 cup Instant Brown Rice
•8 oz pkg  Sharp Cheddar Cheese, divided

•15 oz can Tomato Sauce


Directions

•Preheat oven to 375°F.
•In a large sauce pan, sauté ground beef or turkey and onions, green peppers and garlic for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper.
•Stir in the tomatoes and rice. Remove from heat, and stir in 1 cup cheese.
•Spread mixture evenly into a 13x9 baking dish and top with tomato sauce and remaining cheese.
•Bake for 20 minutes, until heated through and cheese is melted and bubbly

  2. Can't wait to try this one out - I love stuffed peppers, but they can be such a hassle for my kids to eat!
